Apple halwa (microwave version)

Fall/winter is the season for hot baked dishes and the smells of cinnamon, nutmeg, vanilla and other sweet flavors in your kitchen.  It is also the season when apples are plentiful.
I experimented with a simple apple halwa , left out the dairy so it stays vegan and fused it with the spices traditionally used in apple pies.  It is a great way to get your kids to eat their apples.  It can be served in a bowl with a spoon, or in decorative pieces
This recipe was done wholly in the microwave .







Ingredients



4 cups of finely chopped or grated sweet apples - peeled and seeded ( about 6 medium apples)
2 tbsp ghee ( use a vegan alternative or coconut oil)
1/3 cup sugar
1/2 teaspoon ground cinnamon
1/4 teaspoons ground nutmeg
1/8 teaspoon ground allspice
1/8 teaspoon ground cardamom

2 tablespoons of cashews or choice of chopped nuts



Method


Melt the ghee or butter in a microwave safe dish by putting in microwave for 1-2 minutes




Add the apples and mix well. 


Microwave on high for 15 minutes.  Remove and crush the apples with a spatula or wooden spoon to mash it.  Stir well.

add the sugar and stir to mix

Cook on high for another 10 minutes, removing at 5 minutes to stir.

Add the spices and mix well. Cook for 5 minutes more on high.
Add the nuts and mix well. Cook for another 5 minutes. 

 The mixture should look smooth and shiny and brown.  Remove and place in a greased dish.  Smooth the top.  Allow to cool

When cool cut into squares.
Decorated with nuts if you like.




Refrigerate.
